Start The Grill: Italian-Style BBQ Avocado Recipe Is Sure To Please

We’ve been grilling up Avocado this summer and loving it! One of our favorite weekly recipes for BBQ Avocado is this Grilled Avocado and Flank Steak Sandwich. Straightforward and tasty I guarantee you your whole family will be drooling for another bite.

While I was searching around on avocadosfrommexico.com for a new BBQ Avocado recipe. I came across one that met my theme of the month and had me smiling from ear to ear.

You see, my husband and I are four weeks away from taking off on a jet plane. Following a dream of ours on a road trip through southern Italy!

Eeek! Yes, you read that right Italy!

Since booking our dream trip to Italy we are drinking, eating, speaking and picturing nothing but the European boot in our minds.

As a result of all the Italy on my minds when I came across this Italian-Style BBQ Avocado recipe over on avocadosfrommexico.com blog. I knew it was one that would match my monthly theme of everything Italian.


Italian-Style BBQ Avocado Recipe

The recipe is simple, and you most likely have all the ingredients on hand. 

1 slightly firmer Avocado from Mexico | 1 lemon | olive oil to drizzle | 2 tbs diced tomatoes | 1 minced garlic clove |

1 cup shredded mozzarella or parmesan cheese | 2 tbs prepared pesto

Please note: this recipe serves one, double or triple the recipe to suit your family.

First of all, cut your avocado from Mexico in half and remove the pit. Squeeze lemon juice across the flesh and coat the outside side liberally with olive oil. Sprinkle with salt and pepper. Place halves flesh-down on the cooler top grill rack of your BBQ for about 2 to 3 minutes. Flip and grill Avocados for another 2 to 3 minutes.

Sprinkle with shredded mozzarella or parmesan cheese. Finally, drizzle prepared pesto over the top. Grill until the cheese is oozing.

In addition to enjoying this recipe scooped out as is. You can alternatively spread BBQ avocado on top a warm, grilled rustic bread.
