While I was searching around on avocadosfrommexico.com for a new BBQ Avocado recipe. I came across one that met my theme of the month and had me smiling from ear to ear.

As a result of all the Italy on my minds when I came across this Italian-Style BBQ Avocado recipe over on avocadosfrommexico.com blog. I knew it was one that would match my monthly theme of everything Italian.
Italian-Style BBQ Avocado Recipe
The recipe is simple, and you most likely have all the ingredients on hand.
1 slightly firmer Avocado from Mexico | 1 lemon | olive oil to drizzle | 2 tbs diced tomatoes | 1 minced garlic clove |
1 cup shredded mozzarella or parmesan cheese | 2 tbs prepared pesto

First of all, cut your avocado from Mexico in half and remove the pit. Squeeze lemon juice across the flesh and coat the outside side liberally with olive oil. Sprinkle with salt and pepper. Place halves flesh-down on the cooler top grill rack of your BBQ for about 2 to 3 minutes. Flip and grill Avocados for another 2 to 3 minutes.
Fill halved BBQ avocado with 2 tablespoons of diced tomatoes and 1 minced garlic clove. Sprinkle with shredded mozzarella or parmesan cheese. Finally, drizzle prepared pesto over the top. Grill until the cheese is oozing.
In addition to enjoying this recipe scooped out as is. You can alternatively spread BBQ avocado on top a warm, grilled rustic bread.
I have to admit that I have never tried Avocado, but the idea of grilling it is a good idea, Anything grilled is better right?
