You can choose to intake processed foods and feel sluggish or choose to eat clean and feel awesome. The choice is yours. This summer I did try to find a balance between the two. You won’t find Hamburger Helper in my home but you would have found me indulging on chip truck french fries this summer on a few occasions. Food to me is the path to your future and I deeply, wholeheartedly understand the importance of what my family is putting into their mouths. I have been listening to my body and my family’s bodies and I know what we can and cannot eat. I have seen firsthand how much one can glow and gain focus just by eliminating your own toxic foods from your body.
With clean eating comes challenges.
Although this “trend” is growing into something amazing, it still feels so hard at times to be 100% successful when every corner you turn you are taunted with the not so good foods. The flyers are lined with processed food products. The restaurants in my small town don’t over up much in terms of gluten, dairy or egg-free to give me a night off with success. Potluck dishes are smothered in cheese, cream and everything I cannot eat. The hard part I find about feeding my family clean foods is finding quick easy recipes and trying to balance a meal plan into our already busy days.

When Abigail from That Clean Life reached out to me about the launch of her new site ThatCleanLife.com I was very happy she had a solution to the exact problem I was having a hard time with, since introducing clean eating to my family.
I have made a few meals and desserts from ThatCleanLife.com over the last few months. Although I have to say the winner to-date is her Grilled Corn, Nectarine & Quinoa Salad Recipe. I have taken this to a few pot luck BBQ’s over the summer and I have always came home with an empty dish.
Since corn and nectarine are in-season and summer is wrapping up Abigail gave me permission to share her Grilled Corn, Nectarine & Quinoa Salad Recipe with you! I am so excited…you will love it!
Grilled Corn, Nectarine & Quinoa Salad Recipe
This recipe makes 4 servings. However, all members of ThatCleanLife.com can adjust the serving size from 1-24 servings. Making it easy to accommodate your needs.
Ingredients – Cooking and eating should be fun. Leave out what you don’t like and add your favourites. I omitted the cucumber and used mandarin oranges once in place of the Nectarines. Since my garden was hopping with parsley I used it in place of cilantro.

1/2 cup Quinoa (uncooked)

1 cup Water

2 Corn on the Cob (grilled or steamed and kernels removed)

2 Nectarine (pitted and cubed)

1/2 cup Red Onion (finely sliced)

1/2 Cucumber (diced)

1/2 cup Cilantro (chopped)
-
1/2 cup Mint Leaves (chopped)
-
1/2 Lemon (juiced)
-
2 Garlic (cloves, minced)
-
2 tbsps Extra Virgin Olive Oil
Sea Salt & Black Pepper (to taste)

I nned to start doing a detox
This sounds great! Im in the middle of doing a detox right now before I start clean eating!
One should give attention to becoming grateful to what someone already possesses in life.
I love salads and have been keeping an eye out for one with quinoa as I have some to use up.This looks very delicious!
I am totally up for a detox just like this. I am all about healthy and healthy eating but I agree as well it is hard to deny yourself stuff sometimes. I had a salad at a fast food place today and it didn’t feel really great if only because the chicken in it didn’t seem quite right either. But a week or so ago I had french fries with the kids also. So I get that. My hardest battles here for me is sugar. I have a lot of difficulty eliminating sugar.
