Stir Things Up With This Vegan Apple Crisp Recipe
We are knee-deep into Fall. Crisp Fall air leaves covering the ground, comfort food is warming our bellies. Our kitchens are preparing our warm pumpkins and apple recipes filling our homes with the sweet and spicy scents. If you’re looking for a new flavor, you’ll never guess what I mixed into this Vegan Apple Crisp Recipe.
Stir Things Up with This Vegan Apple Crisp Recipe
Apple crisp is a fall comfort dessert consisting of baked apples, topped with a crispy oats crust. This Vegan Apple Crisp Recipe uses a secret ingredient you just may have kicking around in your cupboard from your favorite sparkling summer ice tea recipe.
What you need:
Vegan Apple Crisp Base
- 6 organic apples. (I used whatever was getting soft in my fridge.)
- 1 Tsp of lemon juice
- 1/4 cup Nestea Ice Tea powder
- 1 1/2 Tsp of cinnamon
- 3 tbsps of cornstarch
- 1/2 Tsp of freshly ground ginger ( feel free to omit or add more to taste your taste buds.)
- 1/4 cup of sugar (I used coconut sugar)
- pinch of pink Himalayan salt
- 1/4 cup of water
Vegan Crispy Topping
- 1 cup of old-fashion oatmeal
- 1/4 cup Nestea Ice Tea powder
- 1/2 cup of crushed walnuts
- 1/4 cup of sugar (I used coconut sugar)
- 1 1/2 Tsp of cinnamon
- 1/2 cup of melted coconut oil (not vegan? You can use butter if you prefer)
Directions:
- Preheat oven at 350.
- Wash, peel, and slice apples.
- Mix all the apple base ingredients in a bowl together. Set aside.
- Combine all the topping ingredients in a bowl together.
- Fill an 8×8 baking dish with the apple base ingredients and smooth it out.
- Top the apple base with the topping mixture and smooth it out.
- Place into a pre-heated oven for 20-30 minutes or until it’s bubbling.
This recipe makes 8-10 small servings. Pairs perfectly with vanilla Greek yogurt or Coconut whip cream.
Stir Things Up
- You can replace the walnuts with your favorite nut or pecan.
- Add a scoop of pumpkin puree into the apple base for a twist.
- Combine apple and pear, strawberry and rhubarb.
- Play with the sugar if you wish. I tend to cut the sugar in half in most recipes which can quickly be done here.

It would have been helpful to have a weight measurement for the apples. The ones I have are very small with many bad spots that will have to be cut out.
