Creamy Potato Chowder #CarnationSoups

This morning was the first morning my car was covered in a thick layer of frost that required an early start. It was another mild warning from Mother Nature that we are knee deep into fall and winter is on its way. This is exactly why our dinner table has been set with bowls instead of plates. The last few weeks I have been filling out bellies with healthy comfort foods that warm our souls.

Dinner Time Rush

Typically I like to slow cook my soups in the slow cooker or simmer them in my stock pot all day on the stove. I have an advantage. My first job is as a stay at home mom and cooking my family three homemade meals is always my top priority. Along with my role as a stay at home mom comes volunteering at school. This week I spent the day with Miss C at her schools soccer tournament. It really was a blessing to be able to share those moments with her. Although I didn’t have a chance to prepare dinner in the slow cooker that morning and after a long day I was stumped on what to feed my big family. You see, we steer away from frozen French fries and quick processed meals. Meaning I had about 40 minutes to get something home cooked on the table before I could no longer push off the cry’s of hunger from my kids.

Creamy Potato Chowder

Similar to the Creamy Butternut Squash soup recipe I shared a few weeks ago from www.carnationmilk.ca, this one is quick and easy too for those nights you just don’t want to cook.

Creamy Potato Chowder Soup Recipe with Carnation Evaporated Milk

  1. Heat 1 tsp of Crisco® Vegetable or Canola Oil in a large saucepan or stock pot, on medium heat. Add 1 1/2 cups of chopped carrots (approx. 2 large), 1 1/2 cups of chopped celery (approx. 2 large), 1 chopped onion, and 2 cloves of minced garlic. Cook for 3-5 minutes, until onions are tender.
  2. Next add 2lbs of potatoes peeled and chopped into 1 inch pieces. (Tip: I didn’t peel my potatoes because they are full of nutrients and it was quicker.) Then add 4 cups of stock, I used chicken. Bring to a boil, cover pot, reduce heat and simmer for 15 minutes or until potatoes are tender.
  3. Stir in 2 cans of Carnation® Evaporated Milk, simmer for 5 more minutes. 
  4. Puree half the soup to the consistency you like. Return to pot and combine well. Stir in 1/4 cup of chopped dill. Add salt and pepper to taste. Optional: Top with cheddar cheese and enjoy!

Creamy Potato Chowder Soup Recipe with Carnation Evaporated Milk

I have to say the addition of the dill was a new step for me and it added a kick to the creamy potato chowder that brought all the flavours together. Tip: I made this a one pot meal and added frozen shrimp the last 5 minutes. Yes this does mean I should be adding the word seafood to the title but also meant we were getting the protein we needed to call it a one pot meal.
