Main Grain Salad: Featuring Crisp Produce, BBQ #ButterballCA Turkey Breast
Last month I shared an easy, quick and kid friendly recipe that will keep your kitchen clean and cool BBQ Pizza Quesadilla with Turkey Pepperoni. This month I had a little bit of adult flavors on my mind, we are rushing less and deep into Summer. The farmers market is in full swing where I love to walk a Saturday morning and get inspiration for my meals using what my local farmers have to offer. Our country garden is producing fresh crispy produce and herbs for me to add a little crunch to my meals. Nothing tastes better than picking your own crops and eating fresh summer produce minutes later. Not to forget the benefits growing your own garden has for your family as your grow and pick together.
What I love about my next meal idea is that you can have most of the ingredients cooked and ready for you in the fridge. You can also dice and chop the fresh produce you pick up from the farmers market or pick from your own garden in advance. Making this meal once again easy and quick, leaving you more time to enjoy the sunshine.
Quinoa, couscous or pasta whichever grain your cooking that month.
The best part is you can precook your grain toss it with a little extra virgin olive oil and it is ready in the fridge when you are. I like to do this the morning of as I feed the kids breakfast and tidy the house. I find once we go outside and start to play during the summer heat, cooking is the last thing I fancy to pull me away from the kids.
Your pick of fresh local produce in season. Here are a few of my favorites to toss in: Cherry Tomatoes, Asparagus (blanched), Green Onions, Radishes, Cucumber, Peppers, whatever you have on hand works just fine.
Fresh herbs add a fresh kick to any summer salad or meal. A tip I share with my family and friends is rub the herb, close your eyes and take a deep smell from them. I find it helps open my inspiration and gives me the flavor I will be working with. Here are few herbs I would suggest to mince and toss in. However I wouldn’t pair them all together I like using just one or two herb in a salad. Chives, Parsley, Basil, Thyme, Oregano, Dill
