Sugar Free Black Bean Brownies – Our Families Favorite
Since we took on this new lifestyle the thing I struggled with most was having quick and satisfying snacks on hand. I will admit there has been lots of homemade baked goods I have thrown out because they were horrible. When your baking gluten, sugar and dairy-free it cost a lot more and really you don’t want to be throwing money out the window. Since I was introduced to this recipe from my Nutritionist. These sugar free black bean brownie recipe is the one I took to every function over the holidays and this is the recipe my family begs for me to make each week. It has been my lifesaver!
Sugar-Free Black Bean Brownies
Always start any journey in your kitchen with a super cute apron. My daughter and I love our Pretty in Paris in Pink Sugar Baby aprons. Once your looking the part, preheat your oven to 350F. Butter an 8-inch baking pan or use a cast iron pan such as I did. What I love about this recipe is you can throw everything in your food processor at once. Add to your processor one can of no added salt black beans, drained and rinsed. 3 large eggs, 1/3 cup of melted butter, 2 tbsp of chia seeds, 1/4 cup of cocoa powder, 1/8 tsp sea salt, 2 tsp vanilla extract, 1/2 cup of Xylitol or Stevia. Add in 1/3 cup of walnuts than process until everything is smooth and combined.
The last thing to hand stir in are 1/2 cup of sugar-free chocolate chips (Use coupon code: inRdream1 on Well.ca expires 01/29/15) Add the batter to your buttered pan and cook for about 25 minutes.
My tip when baking is to always under cook your baked goods. Don’t pull them out if they are still in batter form, they should be firm to touch on top. The cooking continues along after you take them out of the oven. This will allow for you to get the chewy brownie we all love. Once they are cool cut them into squares and enjoy. These don’t last more than two days around our house. Since they are best warm I always give them a little nuke for 10 secs before indulging.

Oh yes they are completely optional!
Could you use almonds or hazelnuts in place of walnuts? not a walnut fan.
