Back to School Lunch Idea: Cheesy Butterball Turkey Frank Muffins
With the end of Summer here (boohoo) I am finding the lazy days of Summer have brought on lunch boredom. It is true Miss C has been sandwiching peanut butter and jam between 2 pieces of bread for weeks now. I look at it like this, with peanut butter banded from school we can get PB&J out of our system before it is back to brown bag lunches for the school year without peanuts.
Remember the day’s when you were a child? It was PB&J for the whole school year. Well it was for me. I’d have to say my children have it good. OK I am sounding like Gramma I walked a mile to school, up hill in a snow storm (smile). I try my hardest to keep my children’s lunches simple, fun and fresh. This can be a struggle when you are packing for three all with likes and dislikes. When I find something they all love, I don’t over do it, but I use it to my greatest ability. Yes I bribe with it, a little bribery is OK, right?
When I was asked to get creative and add Butterball to our back to school lunch I had some very fun ideas floating around. Turkey Bacon Waffles were made in the test kitchen, we drizzled them with Maple Syrup and the kids couldn’t get enough. They were simple enough, pancake batter, Butterball Turkey bacon and your waffle maker. The winner was our Cheesy Butterball Turkey Frank Muffins. When Miss C started to ask me to make extra and mail them to her friends I knew we had the winner to share. Plus they were super quick to make and we always have a frank or two kicking around which makes using up left over’s extra easy.
The kids will be enjoying these Cheesy Butterball Turkey Frank Muffins this Tuesday packed with a little note to say “Good Luck.”
