What you need:

  • ½ cup full-fat can coconut milk

Directions:

  1. Slowly heat on low the following ingredients: full-fat can coconut milk, unsweetened almond milk, and water in a pot. Stir and watch it carefully, so you don’t burn your milk.
  2. Once your milk is warm, whisk in all powder ingredients: cornstarch, pink Himalayan salt, and Nesquik Chocolate Powder. Keep heating your pudding on low and continue stirring the mixture.
  3. Meanwhile, mash up three overripe bananas and add them to the warm mixture. Your mixture will start to thicken and form bubbles around the edges of the pot. At this point, your mixture is done.
  4. Add the mixture to your frozen pop molds. We tried to use a funnel which didn’t work as planned. I would suggest using a teaspoon to fill the molds.
  5. Freeze for 2 to 3 hours and enjoy!

Tip: We found the pudding pops to come out of the molds easily with a quick rinse of warm water around the base.

Tip: If you have a little one with texture issues and prefer your Frozen Banana Chocolate Pudding Pops without banana chunks you can run the mixture through your high-speed blender.
