Yogurt Parfait Breakfast Popsicles Recipe

Halfway through summer already the kids are tired of the breakfast and lunch options I am making. In this heat I am tired of fighting about it what I put in front of them. Please tell me I am not the only one in this situation?

When I seen that Ritz Carlton Montreal’s Sous-Chef Sebastien Béaulac made popsicles a nutritious snack which could double as breakfast for the kids, I knew this would make everyone in our house smile.

Chef Béaulac added granola, Greek yogurt and swapped out the sugar for all natural Xyla® xylitol which cuts the calories by 40% and carbs by 75%.  And I won’t be telling the kids but because xylitol inhibits the production of bacteria in the mouth, it reduces the chance of cavities! Yes that’s a double win for mama.

Yogurt Parfait Breakfast Popsicles Recipe

Ingredients

100ml milk (or using Almond milk like I do.)

115ml granola

175ml strawberries, chopped

175 ml blueberries

175ml blackberries, chopped

135ml Xyla® xylitol

235ml Greek yogurt

Options: I added a few scoops of Orange Natural Kids ND Shakes to the finished mixture. Which ups the nutritional boost and allows me to give my kids their daily vitamins at the same time.

Instructions

  1. Gently stir berries and Xyla® xylitol in small saucepan. Let berries macerate on counter until Xyla® xylitol is dissolved and syrupy, 10 minutes.
  2. Place pan over medium high heat and bring to a rapid simmer. Cook for 8-10 minutes, stirring often, until berries are thick and jammy.
  3. Remove from heat and cool to room temperature.
  4. Whisk together the yogurt, 1/4 cup of milk, berries, and granola. Mixture should be thick but pourable. If needed, whisk in more milk.
  5. Arrange 6 popsicle molds (1/2 cup capacity) and tap the molds lightly against counter to remove air bubbles.
  6. Insert popsicle sticks into each mold and place popsicles in freezer for at least 6 hours.

There you have it a yummy and nutritious breakfast for all the little and big people in your house.
